Recipe: Raw Pasta w. Basil & Pumpkin Seeds

Serves: 2 adults

Ingredients:

  • 1-2 Zucchini (Julienned)
  • 1 Corn on the cob
  • 1 handful fresh basil
  • 2 Cloves garlic (optional)
  • ½ – 1 Cup Pumpkin seeds
  • 2 Tbsp Sunflower oil or Olive Oil
  • 1 Tbsp Organic Unfiltered Apple Cider Vinegar
  • ½ Tsp Red Pepper Flakes (optional) or you can use dulse or other seaweed flakes
  • Celtic Sea Salt & Organic pepper to taste (pinch)

Recipe

Well there isn’t much to the cooking of this since it is raw, but I start by slicing the zucchini with a medium blade and putting it in a bowl. Slice corn on the julienne tool without the size blade, or use a regular kitchen knife to separate corn from the cob. Mince basil & pumpkin seeds. Pour oil and vinegar on top of zucchini spirals, mix in basil and pumpkin seeds, finish by adding salt, pepper and flakes to taste. Toss the “salad” and serve on plates. Sprinkle on Nutritional yeast as garnish, and add a garlic bread, fresh bread with olive oil, or any other condiment on the side.
