Quick Recipe: Raw Kale salad with seeds and Fresh Sprouts

Since I just started sprouting, I felt like it was time to share a great spring/summer recipe for you all. This time its a easy, simple, delicious and nutritious salad made with the super healthy green, Kale, some cherry tomatoes and for protein, Pumpkin seeds and sprouts.

Ingredients:
1 Bunch of raw Kale
1 cup of fresh sprouts (I used a mix of Mung and Adzuki bean)
A handful Cherry tomatoes cut in halves
1/2 Cup Raw Organic Pumpkin Seeds
1/2 Cup Raw Organic Sunflower seeds (or 1 cup of either)
1 Organic Avocado (optional but adds creaminess to the texture)
2-3 Tbsp Oil (Olive or Sunflower)
1-2 Tbsp Apple cider vinegar
1/2 a lime squeezed
Celtic sea salt to taste
Nutritional Yeast to taste

Directions:
Wash the Kale thoroughly before cutting it to remove any sand or dirt that may still be left. Cut kale in 1 inch pieces, or how you prefer to eat your salad. Cut the tomatoes in halves and avocado in little cubes.
Put all ingredients into the bowl, and mix well.

With the avocado i first cut it lengthwise, then take out the pit. Then i slice into the avocado in 1/4 inch slices lengthwise and then 1/4 inch slices on the width to make cubes. Then just scoop out the avocado with a spoon and you avoid alot of mess.
To mix the salad, I use a bowl with a lid, and put all ingredients in the bowl. Seal the lid and shake the bowl in all directions until the salad is well mixed. Fast and easy, and it mixes the oil and vinegar really well too :-)
