Carrot & Beet Salad with Sunflower Seeds & Tahini

Ingredients

  • 2-3 Carrots
  • 1/2 Red Beet
  • 2 Tbsp Sunflower Seeds
  • 1-2 Tbsp Oil (Sunflower, Olive, Coconut, Safflower)
  • 1 Tbsp Raw Organic Apple Cider Vinegar (Braggs)
  • Juice of 1/2 a lemon
  • 1-2 Tbsp Veganaise (If you want it a little more creamy)
  • 1 Tbsp (Raw) Organic Sesame Tahini
  • Other vegetables like Zuccini, apple, Tomato etc can be added
  • Try adding fruits like oranges, apples even plums can be added
  • Other dressings: Hummus

Process

Wash all the vegetables well and set aside. Grate carrots and Beets on the medium “cut” on your grater.
mix well in a bowl with Tahini, Lemon juice, Veganaise, Apple cider Vinegar, Oil and Seeds.

Ready to eat! Enjoy.
